Spices are pungent or aromatic seasonings obtained from the bark, buds, fruit, roots, seeds or stems of various plants and trees.

almondBitter Almond.  Actually the kernel of the fruit of the almond tree, this nut is slightly sweet and extremely nutritious.  Its light oil has excellent  softening and nourishing properties. 
angelicaWild Angelica. This "herb of the angels" is a member of the parsley family. The culinary plant, with its green, celery-like stalks, grows wild in northern European countries. Its aromatic seeds have been used to flavor cordials and liqueurs.
balmBalm. Also known as Lemon Balm, this herb has lemon scented, mint-like leaves with a slightly tart flavor. It is native to Provence, the south of France and central Europe.
balsamGarden Balsam. Also known as "Fragrant Everlasting,”  this pleasantly aromatic plant with yellow tubular leaves has traditionally been utilized for its astringent properties. It is native to central Europe.
cinnamonThis age-old spice is the inner bark of a tropical evergreen tree. Cinnamon is used for culinary purposes as both a flavoring and a preservative.
corianderThe use of Coriander has been noted as early as the time of the great Egyptian civilization. The seeds are mildly fragrant and have a flavor reminiscent of lemon and caraway. Indigenous to Provence and the Orient.
damianaThe legendary Damiana flower has been used to flavor liqueurs. The herb is native to the Gulf of Mexico.
fennelFennel is an aromatic plant with pale green, celery type stems that have a sweet, licorice-like taste.  Fennel also provides fragrant seeds that are full of flavor. This botanical is a native of Provence.
ginsengGinseng is a root that is native to East Asia.  Offers a delicate earthy flavor.
hyssopHyssop belongs to the mint family.  This herb is native to central and southern Europe, the Provencal region of France, and Russia.
lemonLemon. This fruit originated in Southeast Asia, and is cultivated in tropical and temperate climates around the world today.  The lemon is a juicy and acidic fruit which offers a sweet and savory flavor.
marjoramMarjoram has a delicate, sweet flavor and is native to Provence and North Africa.
nutmegNutmeg was one of the reasons Columbus sailed from Spain five hundred years ago.  This seed from a tropical evergreen has a delicately warm flavor and unmistakable aroma. The nutmeg seed sports a lacy membrane which, when dried and ground, becomes Mace, which has a stronger flavor. This culinary spice is native to the Indonesian Islands.
star aniseStar Anise:  A star-shaped pod used mainly as a spice.  Its flavor is derived from the same oil that gives anise seed its pronounced liquorice flavor.  Star Anise is native to China and is a member of the Magnolia family.
